Dry Roasted Pecans

1 pound pecans
3 Tbs. salt
1 ½ quart water

Preheat oven to 275° F. In a large container, combine water and salt; bring to a boil. Add pecans, turn off heat and stir 3 or 4 minutes. Drain in a colander. Place damp pecans in a roasting pan and salt liberally. Bake 10 minutes and salt to taste. Continue baking 75 minutes longer shaking pan every 15 minutes. Pecans should be completely dry when done.
